<h2 class="wp-block-heading">The Art of Patience: Resting Your Coffee for the Perfect Brew</h2>



<p>We believe that a great cup of coffee isn&#8217;t just about the roasting; it&#8217;s also about the resting. <br>Resting your freshly roasted coffee beans is a crucial step in the journey to the perfect cup. But why is this rest period so important?</p>



<h4 class="wp-block-heading">Unlocking Flavour and Aroma</h4>



<p>When coffee beans are roasted, they undergo a transformation, developing complex flavours and aromas. This process continues even after the roast is complete. Resting allows for the release of carbon dioxide and the stabilization of the beans&#8217; flavour compounds. If brewed too soon, your coffee may taste overly acidic or sharply bitter, as it hasn&#8217;t had enough time to develop its full flavour profile.</p>



<h4 class="wp-block-heading">The Ideal Resting Period</h4>



<p>So, how long should you rest your coffee? The answer varies depending on the roast level and your personal taste preferences. However, a good rule of thumb is:</p>



<ul class="wp-block-list">
<li><strong>ZENITH:</strong> Rest for 7-10 days. We roast this Ethiopian a touch lighter than the average &#8216;Medium&#8217; roast, but the floral and tropical flavours really shine after a longer rest period.</li>



<li><strong>DAYBREAK:</strong> Rest for 5-7 days. This bold Columbian is roasted on the darker side of medium, with a lower acidity, this bean can be enjoyed a bit earlier than it&#8217;s fruitier counterparts.</li>



<li><strong>BIRDSONG:</strong> Rest for 6-8 days. This Guatamalan hard bean features a fruitier note when let rest a week or so, it will have a bit of acidity cracked too much earlier.</li>



<li><strong>SIERRA:</strong> Rest for 5-7 days. This big juicy Peruvian is roasted a later medium, and like Daybreak has a lower acidity off the roaster, but a week should bring out a subtle fruity note along with it&#8217;s sweet and nutty body.</li>
</ul>



<p>Remember, these are guidelines and the resulting flavour can vary depending on other factors like storage, humidity and ofcourse, brew method.</p>
